Un dels objectius de la Càtedra és el foment de la investigació pel coneixement sobre la fruita seca i la seva relació amb la salut, uns projectes que esdevenen publicacions científiques per part dels investigadors. A més a nombroses publicacions en relació a l'estudi dels fruits secs, el Prof. Jordi Salas-Salvadò coordina i participa amb el seu equip en l'estudi de major envergadura que s'ha fet sobre nutrició a Espanya: l'assaig PREDIMED (Prevenció amb Dieta Mediterrània). Ara a més a més, és el coordinador de PREDIMED-PLUS.

Es busca valorar els efectes de la Dieta Mediterrània en la prevenció primària de les malalties cròniques. En aquest assaig clínic participen més de 90 investigadors dels principals grups de nutrició espanyols. Hi participen 7447 voluntaris amb un alt risc cardiovascular amb l'objectiu principal d'esbrinar si la Dieta Mediterrània suplementada amb oli d'oliva verge extra o fruits secs evita l'aparició de malalties cardiovasculars (mort d'origen cardiovascular, infart de miocardi i / o accident vascular cerebral).

El projecte PREDIMED-PLUS és una de les més importants iniciatives de recerca sobre nutrició realitzada a Espanya. Un assaig multicèntric, aleatoritzat, de prevenció primària cardiovascular en homes (55-75 anys) i dones (60-75), amb un índex de massa corporal ≥ 27 i <40 kg / m2 i síndrome metabòlica. Consisteix en una intervenció similar a la realitzada en l'estudi Predimed-1 amb l'oli d'oliva verge extra i els fruit secs, però sense restricció calòrica ni promoció d'activitat física ni de pèrdua de pes, tot envers d'un grup d'intervenció on sí tindran objectius de pèrdua de pes basats en el consum de dieta mediterrània hipocalòrica i promoció d'activitat física, a més del consum d'oli d'oliva verge i fruits secs.
